Green or semi ripe plantains mashed in a mortar until a soft, homogeneous paste is obtained, shaped into balls or small loaves. An iconic specialty of Eastern DR Congo — North and South Kivu, Maniema — where it replaces cassava fufu as an essential side dish. Delicately sweet flavor, dense and melting texture.
