Maboké ya Mbisi 🐟
Whole fish marinated with lemon, garlic, ginger, fresh tomatoes, and chili, carefully wrapped in softened banana leaves, then slow cooked en papillote over embers or steamed. The leaf concentrates the juices, perfumes the flesh, and gives the dish its incomparable vegetal identity. An ancestral technique from the Congo Basin, an emblem of the riverside cuisines of DR Congo.
