Água de Coco — Prepared with cleanly collected fresh coconut water.

Ingredients

• 1000 ml — cleanly collected fresh coconut water

Preparation

Buy intact fresh coconuts sold for their water.

Wash and dry the exterior.

Open on a stable support with a suitable tool and fingers clear; ask the seller to open if unfamiliar.

Collect water in a clean jug and strain shell fragments.

Measure 1 litre, divide into four glasses and serve immediately or refrigerate up to 24 hours.

Reject damaged nuts or abnormal-smelling liquid.
