Ablo

Ablo: a homemade version with weighed ingredients and detailed preparation.

Ablo

Ingredients

  • 250 g rice flour
  • 100 g fine corn flour
  • 350 ml drinking water
  • 40 g sugar
  • 5 g dry baker's yeast
  • 2 g salt

Preparation

Mix the 100 g of corn flour with 150 ml of water and thicken over low heat for 5 minutes, stirring. Remove from heat.

Add the remaining 200 ml of water then let cool. The mixture should be lukewarm, not hot, before incorporating the yeast.

Incorporate the rice flour, sugar, salt, and baker's yeast according to its instructions. Mix until a thick, homogeneous dough is obtained.

Let rise covered for about 60 minutes, depending on the temperature and yeast instructions, until the dough swells. This version uses baker's yeast and not spontaneous fermentation.

Distribute into steam-suitable food molds without filling them completely. Steam for about 20 minutes, until fully set in the center.

Wait until the molds are handleable before unmolding. The total time also includes rising.
