Pudim de leite

Pudim de leite is a milk and caramel flan from the Lusophone repertoire. Gentle cooking in a bain-marie prevents an overly aerated texture.

Ingredients

  • 500 ml whole milk
  • 300 g shelled egg
  • 150 g sugar for the flan
  • 120 g sugar for the caramel
  • 40 ml water

Preparation

Preheat the oven to 160 °C. Prepare a heat-resistant mold and a larger dish for the bain-marie.

Heat the 120 g of sugar with the water until an amber caramel forms. Carefully pour it into the mold without touching the caramel.

Mix the eggs with the 150 g of sugar without whisking excessively. Incorporate the milk and pour over the caramel.

Place the mold in a hot water bain-marie and cook for about 50 to 60 minutes until the flan sets. The center should be just wobbly, without any raw liquid mixture.

Let cool slightly, then cool without excessive delay and refrigerate for at least 4 hours before unmolding. Some of the caramel may remain in the mold; its actual consumption is not weighed.
