Arroz doce is a rice pudding from the Lusophone repertoire. This version, without egg yolk, is flavored with cinnamon.

Arroz doce

Ingredients

  • 150 g short-grain rice, dry
  • 1000 ml semi-skimmed milk
  • 300 ml water
  • 120 g sugar
  • 2 g ground cinnamon
  • 1 g salt

Preparation

Rinse the rice if its instructions require it. Place it in water with the salt and simmer until partially absorbed, about 10 minutes.

Gradually add the milk and continue on low heat, stirring regularly for about 25 minutes.

Add the sugar and cook for another 5 minutes, until the rice is tender and the texture is creamy. The mixture will thicken as it cools.

Divide into 6 bowls and add the cinnamon. Serve warm or cool quickly before storing in the refrigerator.
