Stewed Cowpeas
Cowpeas are simmered in a tomato and onion sauce. The recipe starts with already cooked beans; cooking from dry beans is not included.
Ingredients
- 700 g cooked and drained cowpeas
- 350 g tomatoes
- 180 g onion
- 12 g garlic
- 25 g olive oil
- 3 g salt
- 1 g black pepper
- 250 ml water
- 1 bay leaf of 0.2 g
Preparation
Rinse and drain the already cooked beans. Mince the onion and chop the garlic.
Sauté the onion in oil for 5 minutes. Add the garlic and chopped tomatoes, then let simmer for 10 minutes.
Add the beans, bay leaf, water, salt, and pepper. Let simmer for about 15 minutes to meld the flavors.
Remove the bay leaf. Mash a few beans against the side of the pot if you want a thicker sauce, then serve.
