Stewed Sweet Potato Leaves
These tomato-stewed sweet potato leaves are a vegetable side dish. They should not be confused with cassava leaves, which require different preparation.
Ingredients
- 500 g edible sweet potato leaves, sorted
- 150 g peeled onion
- 300 g tomatoes
- 10 g garlic
- 25 g red food-grade palm oil
- 3 g salt
- 200 ml water
Preparation
Use only leaves identified as edible, purchased for food. Discard hard stems, wash and chop the leaves.
Melt the minced onion in the oil for 5 minutes over moderate heat, then add the garlic and chopped tomatoes. Cook for 5 minutes.
Add the leaves, salt, and water. Cover and simmer for about 15 minutes, stirring until the leaves are tender and fully cooked.
Uncover to reduce the liquid if necessary, without letting it stick. Serve hot with the accompaniment of your choice, counted separately.
