Dersa
Dersa is a garlic and spice base used to season several preparations. This sheet presents it as a condiment, in small portions.
Ingredients
- 60 g peeled garlic
- 20 g sweet paprika
- 10 g ground cumin
- 15 g fresh chili, deseeded
- 60 g olive oil
- 20 ml lemon juice
- 6 g salt
Preparation
Peel the garlic cloves and remove the sprouts if they are very developed. Deseed the chili, protecting your hands, then wash them thoroughly.
Pound garlic, chili, and salt in a mortar until a coarse paste forms.
Add paprika and cumin. Gradually incorporate the oil and lemon juice to bind without making a liquid sauce.
Divide into twelve small condiment portions. Add to a potato, fish, or meat dish according to the recipe followed.
Preferably prepare just before use. This garlic paste in oil is not a pantry preserve; refrigerate immediately if not used without delay.
