Makroud el louz
Makroud el louz is an almond pastry coated with icing sugar. It is distinct from makroud made with semolina and dates.
Ingredients
- 500 g ground blanched almonds
- 180 g sugar
- 100 g shelled egg
- 30 ml lemon juice
- 250 g icing sugar
- 50 ml food-grade orange blossom water
- 50 ml water
Preparation
Preheat the oven to 160 °C. Mix the almonds and sugar, then gradually add 15 ml of lemon juice and the egg to obtain a firm dough.
Shape into logs, flatten slightly, and cut twenty-four regular rhombuses.
Place on a lined baking sheet and bake for 12 to 15 minutes, until the dough sets, without strong coloration. Let cool completely.
Mix the orange blossom water, water, and the remaining 15 ml of lemon. Briefly moisten the cooled rhombuses then drain them.
Coat them with icing sugar and let dry on a rack. The amount of icing sugar prepared is not assimilated to the amount actually retained.
