Tamina

Tamina combines toasted semolina, butter, and honey. This recipe describes a sweet treat to share, with a flexible texture that thickens as it rests.

Tamina

Ingredients

  • 250 g fine durum wheat semolina
  • 150 g unsalted butter
  • 180 g honey
  • 2 g ground cinnamon

Preparation

Toast the semolina dry in a heavy skillet, over low to medium heat, stirring for 12 to 15 minutes until it achieves a uniform golden color.

Melt the butter in a saucepan over low heat. Add the honey and warm without bringing to a strong boil.

Pour the toasted semolina into the hot mixture and stir with a spatula until homogeneous.

Let rest for 5 minutes; the grains will absorb some of the fat and honey, which will thicken the preparation.

Divide into a dish or ten small portions and decorate with cinnamon. Serve warm.
