Ghribia
Ghribia is a melt-in-your-mouth shortbread cookie. This oil-based version maintains a light color and a hint of cinnamon.
Ingredients
- 400 g wheat flour
- 180 g sunflower oil
- 140 g icing sugar
- 2 g ground cinnamon
Preparation
Preheat the oven to 160 °C. Mix the oil and icing sugar until smooth.
Gradually add the flour. Work just enough to obtain a dough that holds together without becoming elastic.
Divide into twenty-four portions and form small domes. Arrange them on a lined baking sheet, spacing them out.
Sprinkle small touches of cinnamon on top. Bake for 15 to 20 minutes; the cookies should remain pale, with a lightly colored bottom.
Let cool completely on the baking sheet before moving the ghribias, which are fragile when hot.
