Griwech
Griwech is a pastry made of cut and intertwined dough, fried and then honeyed. The open shaping helps to cook the strips evenly.
Ingredients
- 500 g wheat flour
- 100 g unsalted butter
- 50 g shelled egg
- 30 ml food-grade orange blossom water
- 150 ml water
- 5 g baking powder
- 10 ml vinegar
- 2 g salt
- 250 g honey
- 30 g sesame seeds
- 1000 ml oil for deep frying, quantity not assimilated to absorbed oil
Preparation
Mix flour, baking powder, and salt. Rub in the melted butter, then gradually add egg, vinegar, orange blossom water, and water.
Gather into a soft dough without kneading for too long. Cover and let rest for 30 minutes.
Roll out thinly, cut into rectangles, and make parallel incisions, leaving an intact frame. Pass the strips alternately to form a small interlacing, without tightening.
Fry in small batches in oil at 170 °C, about 2 to 3 minutes per side, until cooked and golden brown. Drain.
Gently heat the honey and dip the drained pieces, then sprinkle with sesame. Let the excess drip off. The amount of honey and oil actually retained is not measured.
