Zviti
Zviti, or zfiti, is associated with Bou Saâda and M’Sila. It combines crumbled flatbread with grilled vegetables and spicy seasoning.
Ingredients
- 350 g fine durum wheat semolina
- 220 ml water
- 4 g salt
- 500 g crushed tomatoes
- 250 g seeded bell peppers
- 15 g seeded fresh chili
- 12 g peeled garlic
- 45 g olive oil
- 20 g fresh cilantro
Preparation
Mix semolina, 2 g salt, and 200 ml water. Knead until you get a firm but supple dough, then let it rest for 15 minutes.
Roll out a flatbread 1 cm thick. Cook it on a thick pan over moderate heat for 7 to 10 minutes per side, until the center is cooked.
Grill tomatoes, bell peppers, and chili under the broiler, watching them carefully. Remove detached skins and seeds, then pound the flesh with garlic, cilantro, and the remaining salt.
Tear the hot flatbread into small pieces. Gradually crush them with the vegetables in a large mortar or mix vigorously in a sturdy salad bowl.
Add the oil and the remaining 20 ml of water if necessary. Keep a coarse and moist texture, then serve immediately, with the chili on the side for sensitive guests.
