Doubara from Biskra

Ingredients

  • 500 g cooked and drained chickpeas
  • 400 g cooked and peeled fava beans
  • 500 g crushed tomatoes
  • 12 g peeled garlic
  • 30 g olive oil
  • 4 g ground cumin
  • 3 g sweet paprika
  • 10 g deseeded fresh chili
  • 4 g salt
  • 500 ml water
  • 20 g fresh cilantro
  • 40 ml lemon juice

Preparation

Drain the pre-cooked chickpeas and fava beans. Peel the fava beans if their skin is tough.

Crush the garlic with cumin, paprika, chili, and salt. Gently heat this paste in the oil for 1 minute.

Add the tomatoes and cook down for 8 minutes. Pour in the water, chickpeas, and fava beans.

Simmer for 15 minutes, stirring gently. Mash a few legumes to thicken, without pureeing everything.

Add cilantro and lemon juice off the heat. Serve hot, offering extra chili on the side.
