Batata chtitha

Ingredients

  • 900 g peeled potatoes
  • 300 g crushed tomatoes
  • 20 g tomato paste
  • 15 g peeled garlic
  • 25 g olive oil
  • 4 g sweet paprika
  • 2 g ground cumin
  • 3 g fresh deseeded chili
  • 4 g salt
  • 600 ml water
  • 10 g fresh parsley

Preparation

Cut the potatoes into regular pieces of about 3 cm. Pound garlic, paprika, cumin, chili, and salt.

Heat the oil, add the pounded spices and stir for 30 seconds without burning the garlic.

Add the tomatoes and tomato paste; let simmer for 5 minutes. Incorporate the potatoes and water.

Let simmer covered for 25 to 30 minutes, until a knife easily pierces the pieces. Stir by lifting rather than crushing.

Reduce uncovered for a few minutes if necessary. The sauce should coat the potatoes; add parsley when serving.
