Hmiss
Hmiss, also called felfla in some uses, is a preparation of grilled peppers and tomatoes. It is distinct from an egg shakshuka.
Ingredients
- 700 g seeded bell peppers
- 450 g crushed tomatoes
- 9 g peeled garlic
- 30 g olive oil
- 3 g salt
- 5 g seeded fresh chili
Preparation
Preheat the oven to 220 °C. Place the bell peppers, chili, and tomatoes on a baking sheet.
Roast for 25 to 35 minutes, turning the bell peppers, until their skin blisters. Let cool slightly in a covered container.
Remove the loose skins, stems, and seeds. Chop the flesh with a knife and keep the edible juices.
Gently heat the oil and chopped garlic. Add the vegetables and salt, then simmer for 8 to 10 minutes, stirring.
Stop when the mixture is tender, without excessive free water. Serve warm or cool quickly before refrigerating.
