Salomie
🌯 Salomie is a roti filled with curry, here with chicken and potatoes.
Ingredients
- 4 soft store-bought rotis, 320 g total
- 600 g boneless, skinless chicken
- 300 g potatoes
- 150 g onion
- 250 g tomatoes
- 20 g oil
- 8 g garlic
- 8 g ginger
- 10 g mild curry powder
- 3 g salt
- 180 ml water
Preparation
Slice the onion, chop the tomatoes, and dice the potatoes into small cubes. Cut the chicken into bite-sized pieces.
Sauté the onion in oil for 5 minutes. Add garlic, ginger, and curry powder with a spoonful of water.
Add chicken, tomatoes, potatoes, salt, and remaining water. Cover and cook for about 25 minutes, stirring occasionally.
Check if the chicken and potatoes are cooked through. Uncover and reduce the sauce for 5 minutes: it should coat the filling without being too runny.
Reheat the rotis according to their packaging, without drying them out. Spread the hot curry in the center, fold the sides, then close.
Serve immediately, with a napkin or plate to catch any juice.
