Beef Samoosas
🥟 Beef samoosas are small, crispy triangles filled with a pre-cooked stuffing.
Ingredients
- 500 g ground beef, 10% fat
- 200 g onion
- 10 g garlic
- 10 g ginger
- 10 g mild curry powder
- 2 g cumin
- 15 g fresh cilantro
- 15 g oil for the stuffing and an assumption of 40 g absorbed during frying
- 20 samoosa pastry strips, approximately 250 g
- 15 g flour for sealing
- 30 ml water for sealing
- 3 g salt
Preparation
Melt the chopped onion in 15 g of oil for 5 minutes. Add garlic, ginger, and spices, then the ground beef and salt.
Cook for 12 to 15 minutes, breaking up the meat. The stuffing must be fully cooked and quite dry. Add the cilantro then spread in a clean dish to cool quickly.
Mix flour and water into a thick paste. Keep the pastry strips covered to prevent them from drying out.
Place about a spoonful of stuffing at one end. Fold into successive triangles, keeping the corners closed; glue the last flap. Do not overfill.
Heat the oil bath to around 175 °C. Fry in small batches for 3 to 5 minutes until the wrapper is golden and the center is hot.
Drain on a rack and serve. Check the first triangle to verify the seal holds.
