Dhaltjies
🌿 Dhaltjies, also known as chilli bites, are small spicy fritters made from legume flour.
Ingredients
- 180 g chickpea flour
- 20 g T55 wheat flour
- 5 g baking powder
- 150 g onion
- 100 g spinach
- 15 g fresh cilantro
- 3 g cumin
- 2 g turmeric
- 1 g ground chili, optional
- 3 g salt
- 170 ml water, to adjust
- Oil for deep frying, about 750 ml; nutritional assumption of 40 g retained
Preparation
Finely chop the onion, washed and well-drained spinach, then the cilantro. Mix the flours, baking powder, and spices.
Add the vegetables and salt. Gradually pour in the water to obtain a thick dough that falls heavily from the spoon.
Heat the oil bath to around 170 °C in a tall saucepan. Drop a small spoonful of dough to test the cooking.
Fry tablespoon-sized portions, in small batches, for about 5 to 6 minutes total, turning them over.
Open the first cooled fritter: its center should not be floury or sticky. Adjust the heat before continuing.
Drain on a rack and serve hot. The target yield is sixteen small fritters.
