Durban mutton curry

Ingredients

  • 1 kg boneless stewing mutton or lamb
  • 600 g potatoes
  • 300 g onions
  • 400 g crushed tomatoes
  • 35 g oil
  • 15 g garlic
  • 15 g ginger
  • 18 g Durban curry masala
  • 1 cinnamon stick
  • 3 g cumin
  • 5 g salt
  • 500 ml water, to adjust

Preparation

Cut the meat into 3 to 4 cm pieces. Slice the onions, chop the garlic and ginger, then cut the potatoes into large pieces.

Heat the oil and cook the onions for 10 to 15 minutes, until moderately golden. Add cinnamon, cumin, garlic, and ginger; stir for one minute.

Add the masala with two spoonfuls of water to prevent it from burning. Incorporate the meat, stir, then add the tomatoes and salt.

Pour in enough water for gentle cooking without drowning the dish. Cover and simmer for about 70 minutes, stirring occasionally and checking the liquid level.

When the meat begins to become tender, add the potatoes. Continue for 25 to 35 minutes, until they are cooked and the meat is tender.

Uncover for a few minutes if the sauce is too liquid. Remove the cinnamon, taste, and serve in six portions.
