Snoek braai

๐Ÿ”ฅ Snoek braai is a fish cooked over embers, often accompanied by a slightly sweet apricot glaze.

Snoek braai

Ingredients

  • 1.2 kg edible snoek flesh, opened, gutted
  • 40 g butter
  • 60 g apricot jam
  • 40 ml lemon juice
  • 10 g garlic
  • 3 g salt

Preparation

Have the fish prepared open by the fishmonger. Check accessible bones, pat dry and keep cool while preparing the embers.

Melt the butter gently. Mix with lemon and garlic; reserve one third of this sauce in a clean container, without contact with raw fish.

Prepare a clean grill, ideally double, over moderate embers. Place the fish and baste with the first part of the sauce.

Cook for about 15 to 20 minutes depending on the thickness and intensity of the embers. Move the grill if the juices start to blacken. The flesh should be opaque and flake easily.

Mix the jam with the reserved clean sauce and baste at the end of cooking. Let it just heat and set slightly, without black caramelization.

Separate portions, checking again for bones. Serve immediately.
