Malva pudding

Ingredients

  • 180 g T55 wheat flour
  • 180 g sugar, including 80 g for the sauce
  • 2 eggs, 100 g without shell
  • 70 g butter, including 40 g for the sauce and 5 g for the dish
  • 200 ml semi-skimmed milk
  • 50 g apricot jam
  • 15 ml food-grade white vinegar
  • 4 g baking soda
  • 150 ml liquid cream at 30%
  • 80 ml water for the sauce

Preparation

Preheat the oven to 175 ยฐC. Grease a 20 ร— 25 cm dish with 5 g of butter. Melt the 25 g of butter for the batter and let cool slightly.

Whisk the eggs with 100 g of sugar. Incorporate the jam, the slightly cooled butter, and the milk. Mix flour and baking soda separately.

Add the flour to the wet mixture without overworking. Incorporate the vinegar last, pour immediately into the dish, and bake.

Bake for 35 to 40 minutes. The top should spring back slightly under gentle pressure, and a skewer should come out clean.

Meanwhile, heat the cream, the 40 g of butter, the remaining 80 g of sugar, and the water. Stir over low heat until the sugar dissolves; keep the sauce warm.

Prick the hot cake in several places. Pour the sauce in three stages, waiting for it to penetrate between additions. Stop if the cake no longer absorbs; do not force all the sauce to remain on the surface.

Let rest for 10 minutes and cut into eight portions. Serve warm, without necessarily adding a second sauce.
