Mealie bread
🌽 This mealie bread is a sweet, baking powder leavened corn bread, baked in the oven.
Ingredients
- 200 g T55 wheat flour
- 80 g fine corn flour
- 300 g drained sweetcorn
- 2 eggs, 100 g without shell
- 180 ml semi-skimmed milk
- 50 g melted butter, 5 g of which for the mold
- 20 g sugar
- 10 g baking powder
- 3 g salt
Preparation
Preheat the oven to 180 °C, static heat. Grease a cake pan of about 24 cm with 5 g of butter.
Drain the corn then coarsely blend half of it. Keep the rest as kernels; do not add the liquid from the can.
Mix the two flours, baking powder, sugar, and salt in a large bowl.
In a second bowl, beat the eggs with the milk and the lukewarm melted butter. Add the crushed corn and the kernels.
Pour the wet ingredients over the dry ingredients. Mix just enough so that no dry flour is visible, without aiming for a very smooth batter.
Fill the mold and bake for 40 to 45 minutes. A knife inserted in the center should come out clean; extend for a few minutes if necessary.
Let rest for 10 minutes in the mold, then unmold onto a wire rack. Cut into ten regular slices after cooling.
