Pkaila

Ingredients

  • 1000 g washed spinach, chopped
  • 400 g cooked white beans, drained
  • 600 g diced stewing beef
  • 100 g finely sliced onion
  • 12 g crushed garlic
  • 90 g olive oil
  • 900 ml water
  • 4 g salt

Preparation

Wash, drain and prepare washed spinach, chopped, diced stewing beef, finely sliced onion, crushed garlic. Cut evenly for consistent cooking.

Wilt the spinach over medium heat for 15 minutes, then drain and gently squeeze out excess water.

Confit the spinach with two-thirds of the oil over low heat for about 35 minutes, stirring. They should darken deeply without burning; set aside.

Brown diced stewing beef, finely sliced onion, crushed garlic in a hot casserole for 8 minutes, in batches if needed so the meat does not boil.

Pour in the stated amount of water, bring to a gentle simmer and cook for 90 minutes. Add a little hot water only if needed.

Add cooked white beans, drained, washed spinach, chopped, salt and mix carefully to distribute the ingredients and seasoning.

Continue simmering gently for about 20 minutes. Taste the sauce and check tenderness before removing from the heat.

Serve hot once the texture is right, distributing the components evenly among the stated portions.
