Tamarind juice
🥤 Chilled filtered tamarind pulp drink made with water and a little sugar.
Ingredients
- 120 g plain food-grade unsweetened tamarind pulp without shells or seeds
- 1 litre cold drinking water: 300 ml for mixing and 700 ml to finish
- 40 g sugar
Preparation
Choose plain unsweetened food-grade pulp without shells or seeds. Check packaging and prepare clean bowl, fine sieve, spoon and food bottle.
Put pulp with 300 ml cold water in bowl. Break pieces with spoon and hydrate 15 minutes in refrigerator. Stir to disperse softened pulp.
Add remaining 700 ml water and mix. Filter into clean container pressing pulp moderately with spoon. Remove retained fibres without seeking perfect clarity.
Add sugar to filtered liquid and dissolve. Transfer into clean bottle, close and refrigerate 30 minutes at 4 °C or below.
Stir or shake then divide into 4 glasses about 250 ml depending on filtering losses. Reference: 15 minutes preparation, no cooking, 15 hydration, 30 chilling, total 1 hour. No milk, alcohol, lemon or other flavouring.
