Botokoin
🍩 Water-based yeast fritters, golden outside and soft within.
Ingredients
- 250 g wheat flour
- 220 ml lukewarm drinking water around 30 °C
- 40 g sugar
- 5 g instant dry baker’s yeast
- 1 g salt
- 0.5 g ground nutmeg
- 750 ml frying oil, bath quantity only partly absorbed
Preparation
Mix flour, sugar, instant yeast, salt and nutmeg in large bowl. Gradually add 220 ml water around 30 °C and beat with spatula into thick soft sticky batter without dry flour.
Cover and rise about 60–90 minutes around 25 °C until clearly airy and swollen. Time depends on yeast and room; avoid burning hot surfaces.
Heat oil around 170 °C in tall pot no more than half full. Stir risen batter briefly. With two spoons take about 16 even small portions progressively, not all at once.
Fry 4 batches of 4 about 6–7 minutes each, turning and keeping oil 165–175 °C. Open first-batch fritter after cooling slightly: crumb must be set and airy without raw centre. Reduce size or cook gently longer if needed.
Drain on rack and cool about 5 minutes. Serve 4 fritters per person. Reference: 20 preparation, 35 heating/frying, up to 90 rising, 5 cooling, total 150 minutes.
