Boiled yam
🍽️ Peeled white yam chunks boiled to accompany a separate sauce.
Ingredients
- 800 g peeled food-grade white yam
- 1.5 litres drinking water, or enough to cover
- 2 g salt
Preparation
Choose white yam sold for cooking. Wash outside, peel carefully and weigh 800 g sound flesh. Never substitute an unidentified wild plant or unknown variety.
Cut similar 4 cm chunks, rinse briefly and place in a pan with water and salt, covering the pieces.
Bring to a light boil and simmer about 20–25 minutes after returning to heat until the centre is fully tender under a knife. Do not eat raw yam.
Drain and let steam escape 5 minutes. Remove thick visible central fibres if necessary without crushing all pieces.
Divide into 4 portions and serve with sides separately. Reference 45 minutes: 15 preparation, 25 cooking and 5 draining. Variety and initial heating can add time.
