Tamarind drink
🥤 Filtered tamarind pulp drink diluted with water and lightly sweetened.
Ingredients
- 80 g food-grade seedless unsweetened tamarind pulp
- 1 litre drinking water: 500 ml hot for extraction and 500 ml cold
- 40 g sugar
Preparation
Choose seedless unsweetened food-grade pulp, not strong liquid concentrate. Check package and break pulp into a heatproof container.
Boil 500 ml drinking water, remove from heat and pour over pulp. Cover and steep 20 minutes, then work gently with a spoon to loosen flesh.
Strain through a fine sieve into a clean container. Press moderately without forcing coarse fibres through. Discard residue.
Dissolve 40 g sugar in still-warm liquid, add remaining 500 ml cold drinking water and mix. Refrigerate about 1 hour until cold.
Stir and divide into 4 glasses. Final yield is approximately 1 litre and depends on retained liquid. Reference: 15 preparation, 5 heating, 20 extraction and 60 cooling, total 100 minutes.
