Mahindi choma

๐ŸŒฝ Grilled fresh maize cobs, regularly turned for tender toasted kernels.

Mahindi choma

Ingredients

  • 4 fresh food-grade maize cobs, about 600 g edible kernels in total
  • 1 g salt, optional
  • Water for rinsing

Preparation

Remove husks and silk, rinse and drain. Use fresh still-tender maize intended for eating, never dried flour maize or decorative cobs.

Prepare stable barbecue embers or a grill pan over medium heat. Avoid direct flames. Grill about 20 minutes, turning every 2โ€“3 minutes for lightly toasted patches without blackening all kernels.

Check actual tenderness and extend gently if needed. Very mature hard maize requires a different preparation and does not follow these short timings.

Remove with tongs, cool 5 minutes and optionally salt lightly. Serve 1 cob per person

nutrition refers to edible kernels, not the hard core. Butter and sauces are excluded.
