Mandazi

Ingredients

  • 300 g wheat flour
  • 150 ml unsweetened coconut milk
  • 50 g sugar
  • 6 g baking powder
  • 1 g ground cardamom
  • 2 g salt
  • 15 ml oil for dough
  • About 800 ml frying oil, with an estimated 30 g absorbed by the batch

Preparation

Mix flour, sugar, baking powder, cardamom and salt. Add 15 ml dough oil and gradually add coconut milk. Knead 5 minutes into a soft non-sticky dough.

Cover and rest 20 minutes. Divide into 3 balls, roll each about 8 mm thick and cut into 4 triangles, making 12.

Heat frying oil to about 170 °C in a stable deep saucepan, filled no higher than one-third. Fry small batches about 2 minutes each side, adjusting heat so centres cook without burning.

Drain on a rack or suitable paper. Open a test piece: its centre must be cooked, not doughy. Cool 10 minutes and serve 6 portions of 2 pieces.

Total time is 20 minutes preparation, 20 cooking, 20 dough rest and 10 cooling. The frying bath is not entirely eaten

absorbed oil is an estimate. Baking powder is not interchangeable with baker’s yeast on this timetable.
