  • 40 ml seedless yellow lemon juice
  • 4 thin washed yellow lemon slices, about 40 g total
  • 20 g sugar

Preparation

Prepare heatproof teapot, strainer and 4 cups. Wash lemon, cut 4 thin slices and measure 40 ml juice separately.

Heat 900 ml water to first boil, about 5 minutes depending on equipment, then remove from heat.

Pour over 6 g tea and infuse 3 minutes without boiling the leaves.

Strain immediately and remove all leaves. Dissolve 20 g sugar and add 40 ml lemon juice.

Divide into 4 cups of about 225 ml depending on losses; add one thin lemon slice each. Let cool to a comfortable drinking temperature.
