Kabis
🍪 Cut-out ghee, egg and milk biscuits baked with baking powder.
Ingredients
- 300 g wheat flour
- 80 g soft but not melted ghee
- 80 g fine sugar
- 1 egg, 50 g without shell
- 50 ml pasteurized milk
- 6 g baking powder
- 2 ml food-grade vanilla extract
Preparation
Weigh ingredients and mix flour with baking powder. Work soft ghee and sugar with spatula, incorporate egg, milk and vanilla.
Add flour mixture, bring together without prolonged kneading. Flatten, cover and chill 20 minutes.
Preheat conventional oven to 175 °C. Roll about 6 mm thick and cut about 24 biscuits 5–6 cm wide; gather scraps gently.
Space on 2 cold paper-lined trays, keeping second chilled during first bake.
Bake each tray about 12 minutes, about 25 minutes for both, until dry surfaces, lightly golden edges and fully cooked centres; extend if needed.
Firm briefly then cool on rack. Serve 3 small biscuits per portion, 8 portions. Baking-powder adaptation without nashader, icing or finishing sugar.
