๐ฅ Slow beef stew with peanut, tomato and spinach, cooked to real tenderness.
Ingredients
- 600 g trimmed stewing beef in about 3 cm cubes
- 400 g cleaned fresh spinach
- 300 g diced tomato
- 200 g peeled chopped onion
- 12 g peeled chopped garlic
- 30 g tomato paste
- 100 g roasted peanut paste without sugar or salt
- 15 ml sunflower oil
- 700 ml drinking water, plus more if needed
- Up to 2 g salt and a pinch of pepper
Preparation
Keep beef chilled, cut even cubes and clean hands and equipment after raw contact. Wash spinach, remove tough stems and cut; prepare vegetables.
Brown beef in oil about 8 minutes, batches if needed. Reserve in raw-preparation container; soften onion in pan 5 minutes.
Add garlic and tomato paste for 2 minutes, return beef and add 700 ml water and pepper.
Bring to small boil, partly cover and simmer about 85 minutes until fully cooked and fork tender. Extend with hot water if needed; firm meat is not ready.
Dilute peanut paste in a little hot cooking liquid, return with fresh tomatoes and cook gently 5 minutes, stirring bottom.
Add spinach, cook about 5 more minutes until fully softened, taste before salt and divide 4 main portions. Timing may extend by cut; no cereal included.
