Swala
🥣 Light okra, onion and tomato soup using measured food-grade bicarbonate.
Ingredients
- 500 g cleaned fresh okra without tough ends
- 100 g peeled chopped onion
- 200 g diced tomato
- 1 litre drinking water, plus a little as needed
- 10 ml sunflower oil
- 0.5 g food-grade sodium bicarbonate
- Up to 1 g salt
Preparation
Wash whole okra, remove tough ends, weigh 500 g usable and slice thin rounds; prepare onion and tomato.
Put water, onion and precisely weighed food-grade bicarbonate in a large pan. Bring to boil about 5 minutes, leaving room for foam.
Add okra, simmer about 15 minutes until tender, stirring gently. Keep soup consistency with hot water if needed.
Add tomato and measured oil, simmer 5 minutes more until tomato is cooked without reducing to paste.
Taste and salt only as needed; test a round for tenderness, extend gently if necessary.
Divide 4 starter bowls. This adaptation replaces ash kombo with food-grade bicarbonate, without meat, peanuts or cereal.
