Kufta bel batatis
🥔 Twelve beef and potato patties, four portions, in an explicitly oven-baked home adaptation.
Ingredients
- 500 g peeled potatoes
- 400 g minced beef, 5% fat
- 80 g finely chopped onion
- 40 g fine plain breadcrumbs
- 1 medium egg
- 10 g unsalted butter
- 20 ml sunflower oil for brushing
- 10 g chopped dill
- 10 g chopped coriander leaves
- 2 finely grated garlic cloves
- 1 tsp ground coriander
- Up to 2 g salt and a pinch of black pepper
- Drinking water for potatoes
Preparation
Cook potato chunks in water about 20 minutes until tender, drain and mash with butter. Spread shallowly and cool about 15 minutes.
Keep beef refrigerated until mixing. Mix cooled potato with raw beef, onion, garlic, herbs, ground coriander, egg, crumbs, salt and pepper briefly.
Shape twelve patties about 1.5 cm thick on a lined tray; refrigerate 20 minutes.
Preheat conventional oven to 210 °C and brush patties with the measured 20 ml oil.
Bake about 25 minutes, turning halfway. Check at least 75 °C at centre and extend cooking if necessary.
Serve three patties per person. Beef is mixed through potato, not a separate stuffing; optional sides excluded.
