Bissap

๐ŸŒบ A lightly sweetened red food-grade hibiscus infusion, served chilled, six 200 ml glasses without extra flavourings.

Bissap

Ingredients

  • 20 g food-grade dried red hibiscus calyces, Hibiscus sabdariffa
  • 40 g white sugar
  • Drinking water to make 1.2 litres final filtered drink, including 700 ml for infusion

Preparation

Check hibiscus is sold for food. Sort and briefly rinse calyces in a clean sieve to remove dust.

Bring 700 ml water to boil, about five minutes. Remove from heat, add calyces, cover and steep fifteen minutes.

Strain into a clean heatproof vessel. Stir 40 g sugar into warm infusion until dissolved.

Cool promptly in an external cold-water bath. Then top up with cold drinking water to a measured 1.2 litres final volume.

Cover and refrigerate about one hour, counting cooling after straining within this wait. Seventy-five-minute rest includes steeping and chilling. Extend if not cold enough.

Stir and serve six 200 ml glasses without ice to keep stated dilution. Drink is not fermented and must not be kept in a pantry.
