Benni cake
๐ฏ Thin crisp sesame brittle in amber caramel, twelve small portions without flour or oven baking.
Ingredients
- 120 g plain sesame seeds
- 150 g white sugar
- 40 ml drinking water
- 5 ml neutral oil for equipment
- A small pinch of salt, optional
Preparation
Prepare a heatproof tray with a food-grade silicone mat suitable for hot sugar. Lightly oil the contact surface and spatula with the 5 ml oil. Keep children and pets away.
Toast sesame in a dry pan four to five minutes over moderate heat, stirring. Remove when fragrant and lightly golden; keep warm nearby.
Dissolve sugar with 40 ml water in a heavy pan over gentle heat, then boil without stirring with a spoon. Swirl carefully if needed.
At pale amber, remove from heat. Immediately add warm sesame and optional salt and mix rapidly with a heatproof spatula. Do not touch caramel.
Pour carefully onto the mat and spread 3โ4 mm thick with oiled spatula. Leave untouched thirty minutes until fully cool.
Once cold and brittle, break into twelve reasonably even pieces. Store dry and airtight; one serving is one twelfth of the batch.
