Satini mang
Grated green mango briefly sautéed with onion and ginger, finished with lime. Four small condiment portions.
Ingredients
- 400 g firm green mango flesh, peeled and stoned
- 60 g very finely sliced onion
- 5 g grated fresh ginger
- 10 ml neutral oil
- 15 ml lime juice, adjusted after tasting
- ¼ teaspoon salt, divided
- A little fresh chilli, optional
- Black pepper
Preparation
Wash, peel and stone mangoes on a stable board. Weigh 400 g flesh and grate medium, without puréeing.
Mix with a small part of the salt and rest 5 minutes. Squeeze gently in a clean cloth to remove free water, then separate strands.
Heat 10 ml oil and soften onion for about 5 minutes without browning. Add ginger and stir one minute.
Add mango and sauté gently for about 3–4 minutes, stirring, until slightly softened but still firm.
Off the heat, add 15 ml lime juice and optional chilli. Taste with a clean spoon before adjusting pepper and remaining salt; do not add sugar.
Divide into four small condiment portions. Serve promptly or cool quickly and refrigerate for same-day use with a clean spoon.
