Satini papay — green papaya condiment
Grated green papaya, gently squeezed and quickly sautéed with onion and lime.
Ingredients
- 600 g firm green papaya flesh, peeled and deseeded
- 100 g finely sliced onion
- 15 ml neutral oil
- 30 ml lime juice, divided into two additions
- ¼ teaspoon salt, divided and adjusted
- A little fresh chilli, optional
- Pepper to taste
Preparation
Wash the whole papaya, carefully peel, cut and remove seeds and the central membrane. Protect latex-sensitive skin with suitable food gloves. Weigh 600 g green flesh and grate.
Mix grated papaya with a small part of the salt and rest for 5 minutes. Squeeze in a clean cloth to remove free water, then separate the strands.
Heat oil and soften onion for about 5 minutes without burning.
Add papaya and 15 ml lime juice. Sauté gently for about 5 minutes, stirring, retaining a little crunch without drying out or heavily browning.
Off the heat, add the remaining 15 ml lime juice and optional chilli. Taste and adjust pepper and the remaining salt.
Divide into four small condiment portions with a clean spoon, or cool promptly and refrigerate for same-day serving. No sugar is added.
