Satini brenzel

πŸ† Tender fork-mashed aubergine, onion, lime and chilli as a fresh Creole condiment.

Satini brenzel

Ingredients

  • 600 g young firm aubergines
  • 100 g finely sliced onion
  • 15 ml olive oil
  • 20 ml lime juice
  • A small piece fresh chilli, adjusted to strength
  • 500 ml drinking water for cooking, adjusted as needed
  • ΒΌ tsp salt and pepper, adjusted

Preparation

Wash aubergines, remove stalks and cut even cubes. Keep skin if thin and tender.

Put cubes with about 500 ml water in a saucepan, bring to a simmer, cover and cook about 25–30 minutes until very tender. Check water and extend if needed.

Drain thoroughly, briefly let steam escape and roughly mash with a fork, without blending.

Soften onion in 15 ml oil about 5 minutes. Add aubergine, a small amount of chilli and lime juice.

Stir gently about 5 more minutes until thick and supple. Adjust salt, pepper and chilli without adding sugar.

Serve small amounts as a condiment with a clean spoon. Yield about four condiment portions; no fish or rice included.
