Baobab pineapple-coconut drink
🥥 A creamy baobab, pineapple juice and coconut milk drink made up to one litre and served cold.
Ingredients
- 40 g edible unsweetened baobab pulp powder, bouye
- 300 ml no-added-sugar pineapple juice
- 150 ml unsweetened coconut milk
- 20 g sugar
- 300 ml cold potable water initially, then enough to reach 1 litre total drink
Preparation
Check food-grade baobab pulp powder free of shell/seeds. Weigh 40 g, measure other ingredients and homogenize coconut milk before measuring.
Whisk powder gradually with 200 ml of the initial 300 ml water to avoid lumps.
Sieve finely if needed and rinse bowl with remaining 100 ml through same sieve to recover fine pulp. Discard hard fragments.
Dissolve 20 g sugar, then add 150 ml coconut milk and 300 ml pineapple juice, mixing evenly.
Transfer to measuring jug and top up with cold potable water to 1 litre total. Existing juice/coconut/water count; do not add extra litre.
Cover and refrigerate at least one hour, longer if needed. Not pasteurized; no alcohol.
Stir or shake gently then share four 250 ml glasses. Pulp/coconut may separate naturally; clean utensils and never return used-glass leftovers.
