Papaya jam
🧡 A small ripe-papaya, sugar and lime spread kept refrigerated.
Ingredients
- 500 g ripe papaya flesh without skin or seeds
- 180 g sugar
- 25 ml lime juice
- 50 ml potable water
Preparation
Wash papaya before cutting. Remove all black seeds/membrane and skin, weigh 500 g sound flesh and dice small.
Combine papaya, sugar, lime and 50 ml water in heavy pan. Heat gently stirring to dissolve sugar.
Simmer about 30–35 minutes, stirring often to bottom. Gently crush softened pieces; do not blend hot liquid.
Cool a small sample on cold plate: it should thicken but may stay soft. Extend gently if runny without scorching.
Transfer carefully to clean heatproof small container. Not shelf-stable outside refrigerator.
Cool rapidly in small amount and refrigerate within two hours. Thirty minutes is minimal, not guaranteed cold in every container.
Divide actual yield into 25 equal portions. Use clean spoon and consume within five days refrigerated, never in cupboard.
