Beef skewers
🍢 Herb-marinated beef cubes grilled with red pepper and onion, two skewers per person.
Ingredients
- 600 g boneless tender grilling beef in 2 cm cubes
- 200 g red pepper squares
- 150 g red onion pieces
- 20 g washed scallion
- 10 g washed drained parsley
- 2 garlic cloves
- 20 ml neutral oil
- 20 ml lemon juice
- 1 teaspoon sweet paprika
- ¼ teaspoon salt and pepper
Preparation
Prepare eight clean metal skewers and grill pan. Cut equal 2 cm beef cubes and refrigerate while preparing vegetables.
Finely chop garlic, parsley and scallion; mix with oil, lemon, paprika, salt and pepper in raw-only bowl.
Coat beef, cover and refrigerate one hour. Keep pepper/red onion separately refrigerated.
Thread eight skewers alternating beef and vegetables, leaving slight space. Discard remaining marinade that touched raw beef.
Preheat pan; grill medium-high about 12–15 minutes, turning regularly and working in batches as needed without burning vegetables.
Check at least 63°C in centers of several whole-muscle beef cubes, then rest 3 minutes on clean platter. Extend as needed; cook more thoroughly for vulnerable diners.
Serve two skewers each with vegetables. Handle hot metal carefully; bread, rice and sauces optional and excluded.
