Madd juice
🥤 A lightly sweetened yellow-orange drink from strained plain food-grade madd pulp.
Ingredients
- 250 g plain food-grade madd pulp without stones or shell, fresh or refrigerator-thawed
- 750 ml cold potable water initially, then top up after straining to 1 litre finished drink
- 40 g sugar
Preparation
Choose identified unsweetened stone-free food-grade madd pulp. Check label/storage and thaw in refrigerator beforehand if needed.
Put in clean bowl, add a little of the 750 ml water and break up lumps with spoon or whisk.
Gradually mix in remaining starting water without crushing stones; remove any hard fragment carefully.
Strain into measuring jug through fine sieve, pressing gently. Discard tough fibres and fragments.
Dissolve 40 g sugar, then measure and top up with cold potable water to 1 litre total.
Cover and refrigerate 30 minutes. Stir and check taste without automatically adding sugar. Extra water increases yield.
Serve four chilled 250 ml glasses. Refrigerate rest in clean closed bottle and preferably use within 24 hours.
