Ditakh juice

🥤 A lightly sweetened green fruit drink made with identified food-grade ditakh pulp.

Ditakh juice

Ingredients

  • 250 g plain food-grade ditakh pulp, without stones or shell, fresh or refrigerator-thawed
  • 800 ml cold potable water initially, then enough to reach 1 litre strained drink
  • 40 g sugar
  • 10 ml strained lemon juice

Preparation

Choose identified unsweetened food-grade pulp and check storage. Thaw cold if needed. Never use unidentified wild fruit.

Place pulp in a clean bowl and gradually stir in 800 ml cold potable water, breaking up lumps.

Cover and refrigerate 2 hours to disperse fibrous pulp. Keep cold.

Strain through a fine sieve into another vessel, pressing gently with a spoon. Discard hard fibres.

Add 40 g sugar and 10 ml lemon; stir until dissolved. Lemon seasons but does not replace refrigeration.

Measure and top up with cold potable water to 1 litre total. Mix and divide into four 250 ml glasses.

Serve chilled after stirring. Refrigerate any rest in a clean closed bottle and preferably use within 24 hours.
