Baobab juice

🥛 An ivory baobab-pulp drink made with water and measured sugar, with no milk in the base recipe.

Baobab juice

Ingredients

  • 100 g pure unsweetened food-grade baobab pulp powder, without seeds
  • 1 litre cool drinking water
  • 40 g sugar, or less to taste

Preparation

Wash hands and prepare a clean bowl, whisk, fine sieve and pitcher.

Check that the powder is pure unsweetened baobab pulp, not a prepared drink with sugar or milk.

Put the powder in the bowl. Add 200 ml from the measured litre of water and whisk out dry lumps.

Gradually whisk in the remaining 800 ml. Let the powder moisten for a few minutes, then stir again.

Pass through a fine sieve into a clean bowl. Press soft lumps gently with a spoon and discard retained hard particles and coarse fibres.

Stir in up to 40 g sugar after tasting. Dissolve fully, transfer to the pitcher, cover and refrigerate for one hour.

Stir and divide among four glasses. The yield is about one litre; slight sediment is normal. Add optional ice separately.
