Pineapple juice

๐Ÿ Fresh ripe pineapple blended with cold water and served unstrained. Four pulpy glasses; lemon and sugar are optional and depend on the fruit.

Pineapple juice

Ingredients

  • 600 g ripe pineapple flesh without skin or hard core
  • 400 ml cold drinking water
  • 15 ml lemon juice, optional
  • 20 g sugar, optional and adjusted to taste

Preparation

Wash the pineapple exterior with drinking water. Prepare a clean board, knife and blender bowl; inspect the fruit.

Remove crown, base, skin, eyes and hard core. Weigh 600 g edible flesh and chop into small pieces.

Put fruit in the blender with 200 ml taken from the 400 ml water. Secure the lid.

Pulse briefly then blend until even, following appliance instructions. Never insert utensils while blades are moving.

Gradually add the remaining 200 ml water and blend briefly, avoiding unnecessary foam.

Taste, then add optional lemon and sugar only if desired. Mix until sugar dissolves.

Serve unstrained in four similar glasses after a brief rest for excess foam to settle. Stir gently before pouring.

Refrigerate unserved juice immediately in a clean covered carafe. Use within twenty-four hours; fresh unpasteurised juice is not for room-temperature storage.
