Grilled maize

๐ŸŒฝ Four fresh maize cobs grilled plain, without oil or butter.

Grilled maize

Ingredients

  • 4 similar fresh edible maize cobs, about 600 g edible kernels total
  • 1 g fine salt, optional and served separately

Preparation

Remove husks and silk; reject mouldy or damaged cobs and trim hard ends.

Rinse with drinking water and dry thoroughly; remove remaining silk.

Heat a clean grill moderately with a cooler zone, about ten minutes for a quick appliance. Wait for stable embers if using charcoal, outdoors only in a ventilated place.

Place cobs apart on grill, away from direct flames, and watch initial golden marks.

Quarter-turn with long tongs every 3โ€“4 minutes to cook all sides evenly.

Cook about 20โ€“25 minutes total, depending on cobs and grill. Move to cooler heat if colouring too quickly; firm maize may need longer.

Carefully remove an end kernel with a clean utensil, cool before tasting and check cooked tender texture without raw floury centre. Extend gently if needed; avoid black charring.

Serve four cobs warm and safe to hold, salt optional separately. Refrigerate leftovers promptly and use within 24 hours after thorough reheating.
