Daddies

Ingredients

  • 400 g all-purpose wheat flour
  • 20 g extra flour for rolling, as needed
  • 100 g sugar
  • 50 g unsalted butter
  • 20 g whole milk powder
  • 160 ml drinking water
  • 1 tsp finely grated unwaxed orange zest
  • 1/4 tsp ground nutmeg
  • 1 g salt
  • About 1 litre neutral frying oil, not all consumed

Preparation

Wash orange and grate colored zest only. Combine 400 g flour, zest, nutmeg and salt in a heatproof bowl; reserve 20 g dusting flour.

Heat 160 ml water, sugar, butter and milk powder gently, stirring to dissolve. Simmer gently about 1 minute, then remove from heat.

Gradually pour hot liquid into flour and stir with a sturdy spoon. Do not touch hot dough. When cool enough, knead briefly until firm and even.

Lightly flour the counter. Roll into a rectangle, fold in thirds and roll again. Complete three folds in total and finish about 1 cm thick.

Wrap to prevent drying and refrigerate flat for 8 hours. Unwrap and cut into roughly 1 cm squares.

Heat oil to 150โ€“160 ยฐC in a suitable deep pan no more than half full. Fry small batches 6โ€“9 minutes, stirring gently, until evenly golden.

Drain the first batch and cool a cube before checking that no raw dough remains. Adjust timing; allow oil to recover and avoid crowding later batches.

Spread out and cool completely. Divide into 12 small portions. Store only when cold in a clean airtight container in a dry place; preferably eat within 3 days.
